Sweet Potato Tex Mex Egg Hash

1 cup diced sweet potato

1 cup water

1/2 cup corn

2/3 cup mushrooms diced

2/3 cup sausage sliced

1/3 cup onion diced

5-6 eggs

1/2 cup cheese

1/2 beans

Guac or avocado to top 

Seasonings: (sprinkle of each)

Cumin 

Chili powder

Salt

Garlic powder 

Onion powder

The recipe:

Peel (optional) and dice your sweet potato. Prep your mushrooms and onion by dicing as well. Then slice your sausage.

Drain your beans and rinse, then set aside.

Add your diced sweet potatoes to a skillet then sauté for a few minutes till tender.

To the pan, add your corn, onion, and sausage and sauté for a few minutes then add your beans. Add your seasonings to the mix and combine!

Once the sausage has browned, place 5-6 eggs over the hash you’ve created. Cover with a lid to allow all parts of the egg to thoroughly cook. (Once the whites are fully cooked, you can either allow the yolks to keep heating through or lower the heat to keep those yummy yolks jammy!)

Sprinkle on your cheese and place the lid back on to allow the cheese to melt. Garnish with parsley, avocado or guac if you’d like!
