These bagels are the perfect dish if you have a sweet tooth craving or you want a fun new dish to make with the family this holiday season!! Prep them for breakfast or eat them with a snack! Personally I made them with cinnamon sugar because I LOVE cinnamon, but feel free to top with whatever topping you like instead – EX: everything bagel seasoning mix, sesame seeds, poppy seeds, etc.
The recipe:
Preheat the oven to 375 degrees. Lightly coat baking sheet with cooking spray to prevent the bagels from sticking.
In a large bowl, use a sturdy spatula to combine the self-rising flour and 1/3 cup Greek yogurt until the mixture clumps to a shaggy dough.
Add additional yogurt until you have a good consistency that is not quite sticky, and don’t worry if you don’t use all the Greek yogurt. If the dough needs more moisture, add as much as you need. It depends on the moisture content of the yogurt you are using.
Dump the mixture onto a lightly floured work surface. Knead the dough together by hand for about 5 minutes, until the dough is smooth and elastic.
If your dough is sticking to the surface, add more flour to the surface to make it easier to knead.
Divide the dough into equal parts. Roll each portion of dough into a sausage like shape and press the ends together. Repeat with remaining pieces. Flour your hands as needed as not to stick to the dough.
Arrange the shaped bagels on the prepared baking sheet. Brush 1 tsp butter on the bagels.
Bake for 12-15minutes, rotating the baking sheet midway through baking.
While the bagels bake, microwave the butter in 15 second increments to ensure even heating until melted.
Mix together the butter, cinnamon and coconut sugar till desired consistency. Remove the bagels from oven, and brush or drizzle the cinnamon spread over the bagels.
Return the baking sheet to the oven and bake for another 2-3 minutes until the tops of the bagels have browned.
Once you remove them go ahead and sprinkle your reserve of cinnamon sugar over them and enjoy! xx

2cupsself rising flour( you can also make your own self-rising flour with 2 cups flour, 3 tsp baking powder, 1/2 tsp salt)
1 1/3cupGreek yogurt(use "Greek Yogurt" NOT Greek Style Yogurt as it's much more runny – you want thick yogurt; EX: Chobani, Fage, etc.)
For the Toppings
3teaspoonbutter(1 tsp butter to brush on for initial bake, then rest for cinnamon sugar mixture)
2tablespoon cinnamon
2tablespooncoconut sugarreserve 1 tsp of the cinnamon + sugar mixture for cinnamon sugar topping
