This salad is the most refreshing & easy dish that will keep you feeling full long after! It literally took me less than 10 minutes to make!
3.5 cups arugula
1 cup pasta
1.5 cup chicken, shredded
1/2 cup mozzarella balls
1/4 cup green onion, diced
1 cup tomatoes, diced
2 tbsp pesto
1/2 cup avocado
1/4 lemon, to squeeze
Seasonings: salt and pepper to taste
The recipe:
Cook your pasta according to the package. While your pasta cooks, prep your other ingredients to save time!
Prep your ingredients by shredding your chicken and dicing your green onion and tomatoes.
Add your arugula, pasta, rotisserie chicken, mozzarella, green onion, tomatoes, pesto, avocado, squeezed lemon & seasonings to a large bowl.
Toss & enjoy!! xx
