This dinner dish is full of protein and veggeis and is so quick and easy to make! Lately, I’ve been loving hearts of palm pasta as an amazing alternate for normal pasta. Not only is heart of palm low carb, but also a great source of so many vitamins minerals, including potassium, copper, phosphorus, and zinc!!
1-2 large zucchini
1 yellow onion
3-4 large carrots
1 tbsp olive oil
10 oz. of ground beef, or protein of choice
2 cups marinara sauce
1/2 cup parmasean
2 tbsp cream
1-2 packs of hearts of palm pasta
Seasonings: italian seasoning, garlic powder, salt and pepper
The recipe:
To prep your veggies, dice and peel your carrots and yellow onion, and shred your zucchini.
In a skillet over medium to high heat, saute your veggie in olive oil and garlic powder.
After sauteing for 1-2 minutes, make a hole in the veggies in the middle of the skillet and add your ground beef to cook. Mash into even sized pieces to cook evenly.
Add in your italian seasoning, salt and pepper.
Then, once your ground meat has fully cooked, add in your marinara sauce, cream, and parmasean.
Once your parmasean and cream have fully incorporated, add in your hearts of palm pasta. Cook according to package.
Remove from heat, serve and enjoy!! xx
