I love a good quesadilla but sometimes I just feel so blahhhh after I eat them because of all of the cheese and grease and sauces!! So I tried to make a healthier ish version and it turned out pretty good! I was making them for my roommates and one of them actually said “if this was at a restaurant, would hands down go back and get it again” so yeah I’d call that a win!
Here’s what you will need:
- Low carb tortillas (mine are from Trader Joe’s and they are sooo good..I actually use them for everything)
- Ground turkey
- Finely chopped onions
- Sliced mushrooms
- Canned corn
- Chopped Bell pepper
- Taco seasoning
- Cheese
- Black beans
- Greek yogurt or mayo
- Sriracha
First you will need to brown your ground turkey. The add in your onion, mushrooms, pepper and corn to slightly sauté! Add some of your taco seasoning (not too much just enough to give it a little kick!)
Then put your tortilla on a frying pan and add a sprinkle of shredded cheese, just enough to cover the tortilla! Add your sauté mix and another little sprinkle of cheese so that the top tortilla has something to stick to. Take your spatula and press down on the top tortilla to flatten it out! Flip once so that both sides get nice and crispy!
Now it’s time to garnish! Take your canned black beans and mash them up in a little bowl! Add salt, pepper and a squeeze of lime juice, to taste. In another bowl, mix Greek yogurt or Mayo with a little bit of sriracha and drizzle over your quesadilla! Dip in your black bean paste and boom! You’ve got a delicious, satisfying and somewhat healthy quesadilla to devour!! Enjoy!!
