One of my FAVORITE summertime lunches to make!! It’s so simple and SO DELICIOUS – great for BBQs, get-togethers, meal prep, etc! Plus I promise, everyone will LOVE!!
SERVING SIZE: 2 servings
1 cup couscous uncooked
4 cup arugula
1 avocado, diced
2/3 cup feta
1 cup tomatoes, diced
1/2 cup bell peppers, diced
2/3 cup cucumbers, diced
1/2 cup red onion, diced
DRESSING:
2 tbsp olive oil
1/2 lemon, squeezed
1/2 tbsp Dijon mustard
1.5 tsp red wine vinegar
1 clove garlic, minced, (or if you don’t have 1 tsp garlic powder also works!)
Seasonings: Salt and pepper
The recipe:
Cook your couscous according to package.
Prep your veggies by dicing your red onion, cucumbers, bell peppers, tomatoes, and avocado.
In a large bowl, combine your cooked couscous, arugula, feta, and diced veggies.
Prepare your dressing in a separate bowl and combine your olive oil, lemon, dijon mustard, red wine vinegar, minced garlic/garlic powder, salt, and pepper.
Dress your salad a little at a time till the desired amount and enjoy!! xx
