Mediterranean Couscous Salad
One of my FAVORITE summertime lunches to make!! It's so simple and SO DELICIOUS – great for BBQs, get-togethers, meal prep, etc! Plus I promise, everyone will LOVE!!

Cook your couscous according to package.
Prep your veggies by dicing your red onion, cucumbers, bell peppers, tomatoes, and avocado.
In a large bowl, combine your cooked couscous, arugula, feta, and diced veggies.
Prepare your dressing in a separate bowl and combine your olive oil, lemon, dijon mustard, red wine vinegar, minced garlic/garlic powder, salt, and pepper.
Dress your salad a little at a time till the desired amount and enjoy!! xx
