Here’s what you need:
3 medium tomatoes or 1.5 large tomato, diced
8oz feta block, cubed
1/2 red onion thinly sliced
1/2 cucumber, diced
1/3 cup de-pitted kalamata olives, diced
2 cloves of minced garlic
1 tsp dried rosemary
1/4 tsp oregano
1/4 tsp ground pepper
1/2 tsp salt
1 cup olive oil
1/3 cup olive juice
Juice from 1 lemon
1 tbsp red wine vinegar
Here’s how you make it:
Add all ingredients to a large mason jar or bowl and mix well so that all of the veggies are evenly coated and covered. Then, marinate in the fridge for 4-6 hours, or overnight! Add the marinated feta and veggies to a bed of chopped romaine for the PERFECT greek salad!
