Lettuce cups are always a good idea!!!🥬 Here’s a low-carb meal you can make in 10 minutes- it’s simple, delicious, and nutrient + protein packed!! To meal prep it, just set the lettuce leaves aside and assemble them when ready to eat. This can actually be enjoyed hot or cold!
The recipe:
Prep your veggies, by dicing your onion and washing your romaine. If your carrots aren’t shredded yet, I recommend shredding before cooking so your food will be served warm!
In a skillet on medium heat, drizzle a little bit of olive oil and cook your ground chicken with garlic powder, salt and pepper.
Add in your diced onion and shredded zucchini. I shredded the zucchini right into the pan for fewer dishes! 😉
Saute for about 5-7 minutes or until the meat is cooked through. Drizzle on your teriyaki sauce and mix well with your chicken, onion, and zucchini.
Once cooked through, it’s time to plate!
Scoop your cooked filling into each lettuce cup leaving enough room for toppings! Top with shredded carrots, sesame seeds, and finely chopped cilantro! Enjoy! xx
