Happy Super Bowl week!! Whether you’re actually going to watch the game or not, or you’re just there for the party and friends- these healthy game time treats will get everyone pumped. I even taste tested these with my family and they all approved! (We love great tasty food, trust me..)
MY TOP 4 SUPER BOWL APPETIZERS
1. MINI CHICKEN TACOS
Serves 3-4
Ingredients:
Makes 16 mini tacos
6 medium sized chicken breast strips
1/4 cup cilantro
1 avocado
8 corn tortillas
1/3 cup green onions
Salt & pepper
1/2 cup olive oil
Optional sharp cheddar cheese to top with
Cook chicken in olive oil, salt and pepper to taste. I like to shred my chicken with a pizza cutter! It is so easy and efficient that way.
Slice the tortillas in half.
Pour olive oil in a pan, and place the halves in the oil. Wait for one side to get golden brown, and flip. Once other side is a bit golden brown as well, fold over and create a taco shape.
Take off pan when all sides are golden brown and a bit hard. Dab off oil with paper towel, gently.
Stuff with chicken. Top with green onions, avocado, cheese, cilantro.
SO GOOD!
2. PROSCIUTTO BITES
Serves 3-4
12 Prosciutto strips (each strip makes on wrap)
4 medium sized dates
1/2 cup goat cheese
1 1/2 cup spinach (packed in the cup!)
Grill procistto strips on each side for about 1 minute, or until golden brown on each side.
Place spinach, chopped dates, and goat cheese on the prosciutto.
Wait about 45 seconds- 1 minute so the spinach is a bit wilted and the cheese a bit melted. Roll up in a wrap!
Serves 3-4
3 sweet potatoes
1/2 cup olive oil
Salt and pepper to taste
Serve with sauce of your choice (ranch, ketchup, my fav: garlic aioli)
Rinse and peel sweet potatoes. Set oven to 400 degrees. Finely slice the potatoes, try to get them like 1/4 inch thick or even less! Like potato chips:)

Place slices on cookie sheet, you may need two for the amount of slices you’ll have! Cook for about 10-12 minutes, and then flip them each individually. (Yeah, this part kind of sucks and takes a while!)
Cook them on the other side till crisp and golden brown, about another 10 minutes.

PS. mine in the picture are a little too golden brown hahah you want them justttt a little less than that:)
