This variation is one of my absolute favorite ways to make a Caesar salad for meal prep! Because you’re using raw broccoli, it tends to hold up better and stay crunchy longer when you have it prepared in advance! And when you add the slivered almonds for that extra protein and crunch it’s such a game changer! Also, it’s so quick and easy to make – takes less than 10 minutes to have a fiber-packed salad that will keep you fuller for so much longer!
2.5 cups broccoli, raw and diced
1/4 cup slivered almonds, toasted
1/3 cup green onion
1 avocado diced
1 tbsp olive oil
2 tbsp Caesar dressing
1/4 lemon, to squeeze
Seasonings: Garlic powder, salt, pepper to taste
The recipe:
Wash and pat dry your broccoli. If you’re using a head, chop off the stem as you’re only using the florets! Dice your broccoli florets into nice bite-sized pieces.
Pit & dice your avocado and finely chop your green onions.
Then, in a small pan on medium to low heat, toast the slivered almonds just till they are warm and toasted. But, be careful, they burn super quick so make sure to keep an eye on them!
And no worries if you don’t have slivered almonds, crushed almonds will do just fine!
Add your diced broccoli, toasted almonds, olive oil, Caesar dressing, avocado, green onions, squeeze of lemon, and seasonings to a bowl and mix. It’s that simple!
