Soft boil your eggs by filling a medium pot with water and bring to a gentle simmer over medium heat. Using a slotted spoon, carefully lower the eggs into the water. Simmer for 7-8 minutes for soft-medium yolks (6 minutes for runnier yolks).
Once done, transfer the eggs to a bowl of ice water to cool and stop further cooking.
Create your meditteranean salad by dicing your tomatoes, cucumber, red onion then combine with a 1/2 a teaspoon of olive oil and red wine vinegar. Optional: For extra freshness, stir in some chopped fresh dill!
Toast the slice of whole wheat bread to your liking. Slice the burrata and set aside.
Peel the cooled eggs and cut them in half.
Arrange the salad on a plate, top with burrata, and place the halved eggs on the side. Drizzle with the remaining tablespoon of olive oil and season with additional salt and pepper if needed.
