Blueberry Cobbler Chia Seed Pudding
Absolutely obsessed with this blueberry cobbler chia seed pudding!! I have so many egg or oatmeal breakfasts, and I wanted to switch it up! Especially with one you can meal prep. Feel free to double or triple the recipe to make more for your mornings! It’s packed with antioxidants AND fiber so it’ll keep you feeling energized and full!

Prep your chia seed pudding (typically overnight is best!) by mixing your chia seed, almond milk, and maple syrup till there are no clumps!
Then, place it in your fridge to set.
To make the cobbler portion, in a small pan on medium heat, heat your oats, blueberries, maple syrup, coconut brown sugar, and slivered almonds.
Top with a dollop of greek yogurt and it's good to go! Enjoy! xx
