Blueberry Cobbler Chia Seed Pudding

Absolutely obsessed with this blueberry cobbler chia seed pudding!! I have so many egg or oatmeal breakfasts, and I wanted to switch it up! Especially with one you can meal prep. Feel free to double or triple the recipe to make more for your mornings! It’s packed with antioxidants AND fiber so it’ll keep you feeling energized and full!

CHIA PUDDING INGREDIENTS:

1/4 cup and 1/2 tablespoon chia seeds (or a little over 1/4 cup haha)

1 cup almond milk 

1 tbsp maple syrup 

COBBLER INGREDIENTS:

1/3 cup oats 

1/2 cup blueberries (I used small frozen, easier!)

1 tbsp maple syrup 

1/2 tablespoon coconut brown sugar

-1/4 cup slivered almonds or nuts of choice

-dollop of Greek yogurt to top

The recipe:

Prep your chia seed pudding (typically overnight is best!) by mixing your chia seed, almond milk, and maple syrup till there are no clumps! Then, place it in your fridge to set.

To make the cobbler portion, in a small pan on medium heat, heat your oats, blueberries, maple syrup, coconut brown sugar, and slivered almonds.

Then once combined, layer your chia seed pudding & cobbler! It’s totally optional, you can put it right on top and just mix it in. But, I like to have the layered pudding and cobbler sections to get the yummy flavors in every bite!

Top with a dollop of greek yogurt and it’s good to go! Enjoy! xx
