THE RECIPE:
Preheat oven to 400°F.
Wash and fork each sweet potato. Microwave on each side for 3–4 minutes (depending on size, mine were average, so they cook well this way) until tender. You can also bake them if preferred!!
In a skillet on the stove or in a glass bowl, combine shredded chicken, spinach, and BBQ sauce. Heat gently to warm and mix.
Slice each sweet potato in half lengthwise. Drizzle a little olive oil and mash slightly to create a small cavity for the filling.
Evenly divide the BBQ chicken and spinach mixture into the sweet potato halves. Sprinkle with mozzarella cheese.
Place the stuffed potatoes in the oven for about 5 minutes, just until the cheese melts and is bubbly.
In a small bowl, combine Greek yogurt, a splash of water, lemon juice, dill, parsley, garlic powder, salt, and pepper (you can also use ranch seasoning instead of spices if preferred!) Adjust water for desired drizzle consistency.
Top the baked sweet potatoes with fresh dill, chopped green onions, and a drizzle of homemade ranch. Serve immediately and dig into this delicious savory dinner!
