Tower 12 in Hermosa Beach has the most incredible peanut vinaigrette kale salad that I’ve been dying to remake! It’s so fresh and light and super easy to throw together! And while adding parmesan to an Asian-style salad may seem odd, I promise it’s AMAZING!!
6 cup kale, finely chopped & stemmed
1.5 cup rotisserie chicken
2/3 cup parmasaen
1/3 cup crushed peanuts
1/2 cup cilantro, finely chopped
3 tbsp olive oil (1 tablespoon to massage kale beforehand)
1/2 lime, squeezed
1-2 garlic cloves, minced / 1 tbsp garlic paste
2 tbsp soy sauce
1/4 tsp ground ginger
2 tbsp sesame oil
1/2 tsp rice wine vinegar
Seasonings: salt and pepper to taste
Finely chop and stem your kale to make it super easy to eat. Gently massage your kale in a tbsp of olive oil and pinch of salt to help make the kale more tender.
Chop your cilantro super fine, shred your rotisserie chicken and crush your peanuts.
Now, we’re ready to move on to the dressing! In a separate bowl, mix together your squeezed lime, garlic, soy sauce, ground ginger, sesame oil, and rice wine vinegar.
Mix your kale, cilantro, chicken, peanuts, parm and dressing together in a large bowl and enjoy!! xx
