Asian-Style Peanut Kale Salad
Tower 12 in Hermosa Beach has the most incredible peanut vinaigrette kale salad that I've been dying to remake! It's so fresh and light and super easy to throw together! And while adding parmesan to an Asian-style salad may seem odd, I promise it's AMAZING!!

Finely chop and stem your kale to make it super easy to eat. Gently massage your kale in a tbsp of olive oil and pinch of salt to help make the kale more tender.
Chop your cilantro super fine, shred your rotisserie chicken and crush your peanuts.
Now, we're ready to move on to the dressing! In a separate bowl, mix together your squeezed lime, garlic, soy sauce, ground ginger, sesame oil, and rice wine vinegar.
Mix your kale, cilantro, chicken, peanuts, parm and dressing together in a large bowl and enjoy!! xx
