Cottage Cheese Cauliflower Gnocchi
I've been seeing the trend of adding cottage cheese to pasta dishes everywhere lately and I had to try it! It honestly makes the dish so creamy and 10/10 would recommend trying this! It's perfect, especially on Meatless Mondays when I'm looking to add extra protein to my meals! This recipe is also an amazing option for one-pan low-carb meal prep!

Preheat your oven to 350 degrees.
Prep your tomatoes, broccoli, and asparagus by dicing them into bite-sized pieces.
In a large baking dish, add your cauliflower gnocchi, broccoli, asparagus, and tomatoes along with a drizzle of olive oil, and your seasonings (garlic powder, onion powder, salt and pepper).
Bake for 10 minutes then add your cottage cheese, mozzarella, chicken broth, and basil. Bake again for an additional 5-10 minutes.
Remove from the oven and enjoy!! xx
*Note: you can blend the cottage cheese first to get a creamier consistency!*
