Dairy-Free & Vegan High-Protein Penne Vodka Pasta

Soak cashews in warm water for at least 20 min. Drain and rinse. Blend soaked cashews, white beans, nutritional yeast, salt, olive oil, and milk until smooth. Set aside.
Boil penne in very salty water until al dente. Reserve 2 cups pasta water and set aside. Drain pasta.
In a large pan, heat 1 tbsp olive oil over medium heat. Add diced onion and sauté for 5 min until translucent.
Add garlic and tomato paste. Use ½ cup reserved pasta water to thin the tomato paste into a smooth mixture.
Add the blended cream sauce to the pan. Stir in 1 cup pasta water, saving an additional ½ cup if the sauce is too thick. Season with 1 tsp salt and 1 tsp pepper.
Pour in cooked penne to the sauce and stir to coat evenly. Adjust thickness with reserved pasta water as needed.
Top with chili flakes for a little heat. Serve warm and enjoy a creamy, high-protein pasta!
