Turkey Rice Cups

Here’s what you need:

5-6 leaves of butter lettuce or romaine (I only had cabbage at home and so that’s what I used, and it worked great)

1 zucchini, diced

1/2 onion, diced

1 lb ground turkey

1.5 cup cooked rice

1 cup peas

Sauce: 2 tbsp teriyaki, 1/2 tablespoon of sesame oil, 2 tbsp soy sauce, 1 tbsp rice wine vinegar, 1 clove crushed garlic, 1/2 tsp garlic powder

Topping: sesame seeds

Here’s how you make it:

Start by dicing zucchini and onion. Saute in a little bit of olive oil on medium heat for a few minutes, and then add in the ground turkey. 

Break down the ground turkey and mix it in with the veggies.

Once the ground turkey is fully cooked, after about 10-12 minutes, add in peas and cooked white rice and cook for about 2-3 more minutes.

Sauce: add sesame oil, rice wine vinegar, garlic, teriyaki, soy sauce, garlic powder in a bowl and evenly mix. Then add the sauce to the pan with the veggies, ground turkey and rice.

Once everything is evenly coated in the sauce, add a scoop of of the turkey mixture to each lettuce cup. Quick note: I used cabbage slices for the lettuce cups because that was all I had and it worked well, but I think butter lettuce or romaine would be best! 

Then, sprinkle some sesame seeds on top for that extra flavor a little bit of crunch and enjoy! Red pepper flakes or sriracha would also be a great addition to these!
