Summer Sidedish: Colorful Carrots w/ Tzatziki

Hi! These are the perfect side dish to bring to a family dinner, to pair with grilled chicken or salmon. They’re so pretty and tasty! They need around 50 minutes of time to cook, so just make sure you got time for these babies to roast!

Here is what you will need:

1 bag of carrots (I used colorful a carrot medley from Trader Joe’s)

¼ red onion

4 cloves of garlic

2-3 tbps of olive oil

Salt and pepper and onion/garlic powder

Tzatziki (I used cucumber Tzatziki from TJs)

Peel and cut carrots in half and place on sheet pan with sliced red onion.

Then cover with olive oil, salt, pepper, onion powder and crushed garlic! Roast in the oven at 400 degrees for 35 minutes or until your carrots are fork tender and lightly brown and crispy!

 

Let cool for 5 minutes and drizzle with tzatziki and enjoy! Feel free to add some crushed red pepper if you like a little spice!
