This low-carb dish is so easy to make and tastes so good!! It’s such an easy high-protein easy weeknight dinner!! Paired with a fried egg, it’s absolute perfection!
The recipe:
Dice the zucchini and onion.
Cook the teriyaki beef according to the package instructions in a skillet over medium heat with the veggies. To me, the pre packaged marinated Kevins or Just Meats makes this dinner a 10 minute simple dish. Plus, they both come pre cooked so you can toss the veggies in with the meat.
Cook the pre-packaged meat and veggies in the pan for about 5 minutes before tossing in the cauliflower rice. No matter if the cauliflower rice is frozen or fresh, saute with the meat and veggies for another ~5 minutes on medium. I keep it simple on the seasonings here because the flavor really comes from the marinade in the beef, though feel free to add more seasonings like soy sauce, sesame oil, teriyaki sauce.
Once the skillet of beef, cauliflower rice, zucchini and onion are ready- you have two options! Remove it all from the skillet and fry your eggs in the same pan- or cook your fried eggs in a separate pan. Either work!
To assemble the bowl, start with a base of cauliflower rice, then add the cooked teriyaki beef and sautéed zucchini.
Top with the fried egg and avocado, then garnish with pickled onions, cilantro, and sesame seeds! Enjoy!! xx
