I seriously cannot wait for you guys to try this recipe collab that I did with Carissa Stanton (aka the one and only @broccyourbody on IG!!) We had SO much fun making this fall inspired salad and we can’t wait for you guys to try it!
I’m not sure if there is anything more comforting than fried chicken! This fall southwest salad has SOOO many great textures and flavors: crispy chicken, roasted sweet potatoes, creamy avocado and the best dressing!!
Here’s what you need:
Chicken breasts
Flour
Egg
Romaine
Sweet Potatoes
Corn
Black Beans
Avocado
Cherry tomatoes
Cheddar cheese
Tortilla chips
Jalapeño Lime Ranch: Mix ranch dressing, 1 tbsp minced jalapeño, juice from 1/2 lime
Here’s how you make it:
To fry the chicken: coat your chicken in egg wash and then dip in your flour mixture (flour, salt, pepper, garlic salt and any other seasonings you’d like) and then cook in olive oil until it’s golden brown…Approximately 5 minutes on each side and then let it simmer on low for 5 minutes so it’s completely cooked through!!
In a separate pan, cook your peeled and chopped up sweet potatoes in olive oil, salt and pepper until they are fork tender, approximately 10 minutes!
Add all of the salad ingredients into a bowl and top with the fried chicken! Mix together and enjoy!! xx
