If you’re trying to get more protein in, these healthified tostadas make it easy! The creamy high protein queso is what brings all of the flavors together. Fair warning: once you make it, you’ll be looking for excuses to drizzle it on everything!
SERVING SIZE: 2-3
THE RECIPE:
Preheat oven to 425°F. Lightly spray both sides of the corn tortillas with avocado or olive oil and place them on a baking sheet. Bake for 4–5 minutes per side, flipping halfway through, until golden and crispy.
While the tortillas bake, add cottage cheese, red bell pepper, water, taco seasoning, shredded cheese, and lime juice to a blender. Blend until smooth and creamy and set aside.
Heat a skillet over medium heat and cook the ground beef, breaking it apart with a spatula. Once browned, stir in the taco seasoning with a splash of water and cook for another minute until evenly coated.
Lightly mash the black beans in a bowl.
Spread a layer of the mashed black beans onto each crispy tostada, then top with the seasoned ground beef, shredded lettuce, diced red onion, and sliced avocado. Drizzle the high protein queso generously over the top.
Enjoy immediately while nice and crispy, with extra queso on the side for dipping or drizzling!
