If you can’t decide between banana bread and carrot cake, you don’t have to! Grab those ripe bananas sitting on your counter and get ready to make the most delicious muffins. Every bite is packed with cream cheese frosting and melty chocolate chips!
SERVING SIZE: 12 muffins
THE RECIPE:
Preheat oven to 350°F and line or lightly grease a muffin tin.
In a large bowl, mash the bananas. Add the shredded carrots, melted coconut oil, maple syrup, brown sugar, and vanilla, then stir until combined.
Mix in the flour, baking soda, baking powder, salt, cinnamon, and nutmeg until just combined. Fold in the chocolate chips.
Divide the batter evenly between the muffin cups, filling each about ¾ full. Bake for 15 minutes, or until a toothpick inserted into the center comes out clean.
While the muffins cool, mix together the vegan cream cheese, maple syrup, cinnamon, and vanilla until smooth and creamy.
Once the muffins have cooled completely, spread or dollop the frosting on top and dig in!
