Roasted Red Pepper Dip

You have to try this roasted red pepper feta dip!!! This appetizer super simple, light, and yummy. We first had it in Greece and I’ve been dying to remake it!

1 whole red pepper

2 tbsp Greek yogurt

2 garlic cloves

1 tbsp olive oil

1 block of feta, (~8 oz)

The seasonings: cumin, paprika, onion powder and salt

The recipe:

Preheat your oven to 400 degrees and prep your red peppers by cutting in larger pieces and removing the seeds. Roast your red pepper in the oven for 25 minutes then remove and let cook for a few minutes.

In a blender, combine your red pepper, greek yogurt, garlic cloves, olive oil and seasonings. Blend till smooth then add in your block of feta. Lightly pulse blend again to combine!

Dust with paprika and serve with your favorite pita bread, chips, or crudités, and enjoy! And to make it cute and festive, I cut a pepper into a heart to top it off 🙂
