Healthified Burger Bowls

This dish is my boyfriends favorite bowl I make🫶 It’s so simple and easy to make the best for a low-carb meal prep! Feel free to add as many toppings as you want!

2 medium sized potatoes, halved and sliced

1 white onion, sliced

1 zucchini, cubed

16 oz. / 1 package of ground turkey, or protein of choice

2 slices of cheese of choice, to top

3 tsp butter

The sauce:

1/4 cup mayo

2 tbsp ketchup

2 tbsp relish

2 tbsp mustard

1 tsp sesame oil

Seasonings: garlic powder, salt and pepper

Optional: 1/4 avocado, to top

The recipe:

Preheat your oven to 350 degrees.

While your oven preheats, prep your veggies. Rinse and pat dry your potato, then halve and slice into even slices and add to baking sheet. Season with salt, pepper and garlic powder.

Add your potatoes to the oven for about 15-20 minutes or till cooked through!

As your potatoes cook, cube a zucchini and dice your white onion.

Form your patties by adding your ground turkey to a bowl along with your seasonings of salt, pepper and garlic powder. Using even scoops, roll your ground meat into a ball then press flat to 3/4 -1 inch thickness.

Remember to wash your hands with soap anytime you handle raw meat to avoid contamination!!

Add each to separate pans to cook. (If you only have the one pan, don’t worry! I recommend cooking the zucchini first then your onions as you’ll simultaneously cook your patties with your onions.)

Add your zucchinis to your pan with a drizzle of olive oil. Cook your zucchini on medium heat for 5-6 minutes or till tender. To get that char, let sit for a bit before stirring!

In your other pan, caramelize your onions by adding your diced onions to a pan with oil. Cook onions and stir until onions turn translucent, 1 to 2 minutes.

Reduce your heat to medium-low, continue cooking, stirring occasionally to let the onions brown, about 5 minutes. If they start to stick and burn, stir in a little water to loosen them!

Create an area for your patties to cook in the middle of the pan by pushing your onions into a ring shape along the perimeter of your pan.

Add in your butter and cook your patties for about 7-10 minutes, flipping half way through. Make sure they’re cooked through to ensure there’s no pink!

Top your patties with cheese and cover your pan for 1-2 minutes to melt or if you don’t have. a lid for your pan, feel free to use the same baking sheet your potatoes on and stick in the oven to melt!

To make your sauce, in a small to medium sized bowl, combine your mayo, ketchup, relish, mustard and sesame oil.

Remove all your cooked ingredients from the heat and now it’s time to assemble your bowl!

Feel free to top your burger with sliced avocado for extra nutrients and creaminess! Enjoy!! xx
