Today, we’re making a quinoa veggie bake that’s absolutely perfect for fall! It’s cozy, nutritious, and super easy to prep.
The recipe:
Preheat the oven to 400°F.
Dice all your veggies: carrots, zucchini, onion, broccoli, sweet potato, and mushrooms.
In a large glass baking dish, combine the uncooked quinoa, all the chopped veggies, garlic powder, onion powder, Vegeta, salt, and pepper.
Pour in the water and chicken broth. Mix everything together until well combined.
Bake for 50 minutes.
Remove from the oven, add butter, crushed garlic, extra seasoning if needed, parsley, chives, and cheese. Mix in some of the cheese and top with the rest for a crispy, golden layer.
Return to the oven and bake for a few more minutes until the cheese is melted and golden.
Top with avocado slices, fresh parsley, chives, and green onions.
