Orzo with Zucchini, Ground Turkey & Basil
I don't eat out very much during the week because I really love cooking most of my meals! This recipe is one of my go-to weeknight meals because SUPER simple and delicious and comes together in about 15 minutes which is key! It's packed with veggies, lean protein, some carbs and TONS of flavor! Hope you guys enjoy!

Cook the orzo according to the package instructions.
In a large frying pan, heat a drizzle of olive oil over medium heat. Add the diced onion and minced garlic and sauté until fragrant, about 2 minutes.
Add the ground turkey and break it up with a spoon. Cook until fully browned, about 10 minutes.
Add the zucchini and cook for another 5 minutes until softened.
Stir in the cooked orzo, reserved pasta water, chopped basil, and parmesan cheese. Toss everything together until combined.
Top with chopped tomatoes, an extra sprinkle of parmesan, a drizzle of olive oil, and salt and pepper to taste. Enjoy!! xx
