You guys this breakfast is UNREAL and you need to try this ASAP! I just tried pesto eggs for the first time and I would honestly eat this daily if I could! Super easy to make, looks beautiful and tastes even better!
Here is what you will need:
2 tbsp pesto (I used the vegan pesto from Trader Joes)
2 eggs
1/2 avocado
1 tbsp olive oil
1/4 cup feta
1/4 cup chopped tomatoes
1 slice of whole wheat toast
Here is what you need to do:Â
On medium heat, smear your pesto in a small frying pan. Once the pesto starts to sizzle, crack in two eggs and cook to your liking! While the eggs are cooking, toast a piece of toast and smash your avocado on top and drizzle with olive oil. Then place your pesto eggs on top and top with feta! You can add salt, pepper and crushed red pepper flakes to taste! This is seriously so good and I would eat this daily if I could!
