This salad is one of my perfect go-to meals, so easy and fast to make. It’s the perfect dish if you have some leftover rotisserie chicken but are looking for a simple, refreshing recipe! And I promise – homemade croutons will make all the difference and make this salad something you CRAVE!!
The recipe:
Wash and pat dry your butter lettuce, and finely chop into pieces. I personally love having smaller bite size pieces to make it a better salad to dressing ratio!
Shred your rotisserie chicken and add to a pan with a drizzle of oil, salt and pepper.
Stir for a few minutes, till golden brown. Go ahead and remove from heat, then set aside.
For your homemade croutons, dice your sourdough (or bread of choice) slice into small bite size pieces and add to a pan with a drizzle of olive oil, garlic powder, and salt and pepper.
Stir for a few minutes, till golden brown and crispy and remove from heat!
Pit your avocado and dice.
In a mixing bowl, combine your lettuce, avocado, olive oil, parmesan, caesar and squeezed lemon. Sprinkle in some more pepper and mix well!
