These bites are such an easy, healthy, yummy snack idea! They’re the perfect combination of flavors to make a refreshing light meal, snack or healthy game day appetizer!!
1 cucumber, sliced
2 tbsp cream cheese, (I’m using @montysnyc plant based ranch cream cheese)
1 cup rotisserie chicken
1/4 cup Buffalo sauce
1 green onion, chopped finely to top
1/4 cup carrots, chopped finely to top
Prep rotisserie chicken to make sure it’s shredded into small pieces, and slice your cucumber into thin slices. Finely chop your carrots and green onion into small pieces to use as garnish!
In a bowl, mix together your buffalo sauce and shredded rotisserie chicken, then set aside.
Lay out your sliced cucumbers and spread a dollop of cream cheese on each “bite.”
Scoop your buffalo chicken onto the cucumbers and garnish with your finely chopped green onion and carrots. Serve and enjoy!!
