Bacon Tomato Scramble

Love this breakfast scramble because it’s so easy and only takes 5 main ingredients!! And any breakfast recipe that includes bacon, sign me up!!

SERVES 2

1/2 cup bacon, diced

1/2 cup cherry tomatoes, sliced

5 eggs

1/4 green onions, diced

1/4 cup shredded cheese

Seasonings: salt and pepper to taste, and if you’re feeling fun add garlic powder while sautéing the tomatoes. SO GOOD.

The recipe:

Finely chop your green onions and cherry tomatoes, and chop bacon into bits.

Prep your eggs ahead of time by whisking in a separate bowl. Feel free to add a splash of cream or cottage cheese as well to make them a little creamier.

In a skillet on medium heat, cook your bacon till crispy and tomatoes are wilted. Add in your green onions for about a minute.

Add your whisked eggs and scramble till desired consistency. Stir in your cheese till melted. Add salt and pepper after eggs are cooked. Serve and enjoy!! xx
