Green Goddess Microchop Dip
The key to this salad is VERY finely chopping all your ingredients – the smaller the better! This dip is the perfect summertime snack, appetizer, or just a salad for lunch! Packed full of nutrients and flavor I'm sure this will be a favorite in your summer lineup!

Begin by finely chopping the cabbage, cucumbers, green onions, dill, parsley, and shallots, and add them to a large mixing bowl. For those craving a bit of heat, finely dice jalapenos and incorporate them into the mix. Next, combine Greek yogurt, olive oil, lemon juice, minced garlic, optional caper juice/capers, salt, and pepper into the bowl.
Stir the ingredients thoroughly until well combined. Serve it as a standalone salad or as a dip alongside your favorite chips. Enjoy!! xx
@katieaustin Surely the healthiest “dip” ive ever made!! But sooo yummy🔥 the key is chopping everything super tiny!! Inspired by the viral @Baked by Melissa 2020 recipe!! Heres what i did, with no blending sauce needed: GREEN GODDESS MICROCHOP DIP 2.5 cups cabbage, FINELY chopped 2 cups cucumber, DICED LIKE CRAZY 1/3 cup green onion, you get it 2 tbsp fresh dill 2 tbsp fresh parsley 1/3 cup shallot 1/2 cup plain Greek yogurt 1/3 cup olive oil 1/3 cup lemon juice 2 garlic cloves, minced 2 teaspoons salt 2 teaspoons pepper I used 2 tbsp caper juice- feel free to add some capers in too! Optional: jalapeño for spice
