Quick note: The recipe for the salad below makes 1 serving and the green goddess dressing makes multiple servings!! It’s great to have leftover dressing that you can use for a few days. It’s so delicious on salad, pasta or even as a marinade for chicken!
The ingredients:
1/2 cup chickpeas
1/2 slice of sourdough
2 tbsp pine nuts
2 cups mixed greens
1/4 cup diced cucumber
1/4 cup diced red onion
For the dressing:
1/2 garlic clove
1/6 of an onion (or 1/4)
1/2 cup parsley
1/2 cup cilantro
2 tbsp olive oil
1/4 cup dill
Juice from 1/2 a lemon
1/4 cup greek yogurt
Salt, to taste
Tiny splash of water
The recipe:
First, I put chickpeas and half a piece of sourdough (broken up into small pieces) on a baking sheet and baked in a little bit of olive oil and garlic powder for 5 minutes at 420 degrees. Take out the tray after 5 minutes and add pine nuts to the baking sheet (because pine nuts take 2 minutes to toast). Put the baking sheet with the pine nuts, homemade croutons and chickpeas back in the oven for 2 minutes and then everything will be perfectly toasted.
Now it’s time to make this amazing dressing: add all ingredients to a blender and mix until it becomes green goddess perfection!
Now let’s build our salad: add mixed greens to a bowl. Then add diced cucumber, roasted chickpeas, diced red onion, homemade croutons, a sprinkle of parmesan cheese, and finally, add in your dressing!
Mix it all up until every bite is evenly coated with the dressing and ENJOY!!
