Here’s what you need:
1 large eggplant
Seasoning: salt, pepper, oregano and olive oil
1/2 cup bread crumbs
1 cup marinara sauce
~1 cup shredded mozzarella cheese (you might need more or less depending on how many slices you have)
~1/2 cup shredded parmesan cheese (you might need more or less depending on how many slices you have)
1/2 cup chopped basil
3 cups arugula
1-2 tbsp olive oil
Sea Salt, to taste
Here’s how you make it:
Cut eggplant in circles (about 1/4 of an inch thick) place on a baking sheet, and drizzle with a little bit of oil. Season each slice with a little bit of salt, pepper and oregano.
Bake the eggplant slices in the oven at 400 degrees for about 10 minutes and then flip and cook for 10 more minutes. Then take them out and add 1/2 tsp of bread crumbs to the top of each eggplant slice and bake for about 5 minutes.
Once the breadcrumbs start to get brown and crispy, take the eggplant out of the oven top with marina sauce, shredded mozzarella and parmesan cheese and chopped up basil and put back in the for about 5-7 minutes or until your cheese has completely melted!
Top with a handful of arugula dressed with olive oil and some salt and enjoy! You could definitely add some red pepper flakes here for a little bit of heat!
