I had some friends over for a little fall dinner and I tried out a new recipe and it was actually a huge hit! It’s super easy to make because you only need one baking dish and it’s super hearty and comforting, perfect for the colder months of the year!
The recipe:
Peel the potatoes, slice them lengthwise, and then cut into small half-moons.
Dice the onion and add it to the bottom of a glass baking dish along with the potatoes.
Cut the chicken tenders into small cubes and add them to the baking dish.
Slice the zucchini into half-moons and add to the dish as well.
Add Greek yogurt, olive oil, garlic powder, onion powder, paprika, salt, and pepper to the dish.
Mix everything thoroughly so the chicken and veggies are evenly coated.
Stir in the chopped chives, parsley, Parmesan, and mozzarella cheese until well combined.
Sprinkle a little extra Parmesan cheese on top for a crispy, cheesy finish.
Bake in a preheated oven at 400°F for about 30 minutes, or until the chicken is fully cooked and the top is golden brown. Enjoy!! xx
