1/2 pound chicken breast diced
1.5 tablespoon starch
1/3 cup parm
Garlic powder, onion powder, and salt
1 cup cauli rice
1 whole zucchini
2/3 cup peas
In a mixing bowl, combine your diced chicken, flour, and cornstarch to lightly dredge for that yummy breaded texture.
Add your breaded chicken to a hot skillet and cook for about 7 minutes, stirring to make sure all sides get that golden brown texture and color. Once fully cooked, remove from heat and transfer into a plate.
Prep your zucchini by grating so it cooks evenly along with the cauliflower rice and peas.
Once ready, add your cauliflower rice, peas and zucchini to the same pan you cooked your chicken. Season with garlic powder, onion powder, and salt. Melt in butter for extra flavor and mix well till the veggies are tender.
Transfer the cooked veggies to a bowl and top with your cooked chicken and parm! Enjoy!!
