Healthier Buttermilk Blueberry Maple Muffins

1 1/4 cup flour

1 egg

1/3 cup buttermilk

1/2 cup brown sugar (I used brown coconut sugar to make it healthier!)

1/3 cup maple syrup 

1/2 cup greek yogurt

1 teaspoon baking soda

1 teaspoon vanilla extract

1 cup blueberries in flour

And 2 tablespoons blueberries smashed with my hands

“Frosting”:

1/2 cup greek yogurt

2 tablespoon maple syrup 

1 teaspoon vanilla extract

The recipe:

It’s like a mix of blueberry muffins and blueberry pancakes!!!!

Preheat the oven to 350 degrees.

In a large mixing bowl, combine your muffin ingredients with a mixer or spatula till there are no lumps. Wait to add blueberries till mixing is complete.

In your baking tins – either line with cupcake liners or use baking spray to prevent sticking.

Bake your muffins at approximately 15 minutes for minis.

While the muffins bake, in another bowl, combine your greek yogurt, maple syrup and vanilla extract to make your “frosting.”

Take out your muffins and let cool before adding frosting!
