These stuffed zucchinis are the perfect dish to bring as an appetizer to your dinner parties or just as a low carb option for dinner! They’re packed with healthy proteins, veggies and flavors!! Feel free to make your zucchinis shorter to make them bite sized!
The recipes:
Preheat your oven to 400 degrees.
Peel and dice your carrots and white onion and add to a pan with a drizzle of olive oil. Add in your ground turkey and season with garlic powder, salt and pepper.
As that cooks prep your zucchinis by trimming the top and bottom so the ends are flat then cut into halves or thirds depending on how tall you want your vessel.
Hollow out the insides using a spoon, then add to a baking dish. Place in the oven for ~20 minutes to tenderize the zucchini, then remove so you can add your filling.
Back in your pan, once your meat cooks through and the onions caramelize, add in your marinara sauce and combine.
Once your mixture is combined, pour over your zucchini vessels. Pour the excess into the baking dish too!
Top with your mozzarella and parmesan and place into the oven for 5-10 minutes to melt. Serve and enjoy! xx
