1 1/4 cup tomato, diced
1.5 cups rotini pasta, cooked (or 1 cup uncooked)
3 cups romaine lettuce, finely chopped
2/3 cup white cheddar or Havarti cheese, diced
8 pieces of bacon
Optional: avocado, diced
2 tbsp mayo
1.5 tablespoon olive oil
1/2 tablespoon lemon juice
1/4 teaspoon garlic salt
1/4 teaspoon pepper
2 tablespoons fresh dill, finely chopped
1 teaspoon water
Preheat oven to 375 degrees to make your bacon. Bake for about 12-15 min.
Cook your pasta according to the package then strain.
While your bacon cooks, prep your veggies, cheese & dressing! Dice your tomatoes & cheese into bite-size pieces and finely chop your romaine lettuce.
To make your dressing, in a small bowl add your mayo, lemon juice, olive oil, garlic salt, pepper, water, and fresh dill. Mix to combine!
Once your bacon has finished cooking, allow it to cool then crumble into bite-size pieces.
In a large bowl, combine your dressing, bacon, lettuce, tomato & cooked pasta! Feel free to add a squeeze of lemon to the top if you like the extra acidity. Toss and enjoy!! xx
