Balsamic Chicken

This meal is INSANE you guys: Balsamic chicken with tomatoes, pesto, mozzarella, mashed cauliflower, and roasted asparagus!

Here’s what you need:

1 packet of chicken tenders

1/2 cup tomatoes

1 cup balsamic dressing

4 cloves of garlic (2 for the chicken marinade, 2 for the cauliflower)

6 slices of mozzarella cheese

1 head of cauliflower

2 tbsp Butter

Salt and pepper to taste

1/2 lb asparagus

1 tbsp olive oil

Sprinkle of onion salt

Pepper

2 tbsp pesto

Here’s how you make it:

Marinate chicken in balsamic with tomatoes and garlic overnight if you can but an hour would work if you don’t have time! Then cook the chicken on the stovetop in a little bit of olive oil, with the tomatoes, for about 5-6 minutes on each side or until the chicken is fully cooked. The tomatoes will start to crack open once they are cooked through! This will give the chicken such a nice flavor!

Then, once the chicken is fully cooked, top each piece with a slice of mozzarella cheese and put in the oven on broil just until cheese melts. Only about 1-2 minutes!! Keep an eye on this so the cheese doesn’t burn!

For the cauliflower mash, add cut up cauliflower to a pot filled with water and bring to a boil. Cook for about 15 minutes or until it’s fork tender.  Then add garlic and pepper and salt and mix together with an immersion blender until  it’s nice and creamy!

The asparagus is SUPER quick and easy. Just put the asparagus on a baking sheet and add olive oil, onion salt and pepper and bake  at 400 for 10-12 minutes!

Plate everything and top with a spoonful pesto! You guys!!! The flavors in this meal are UNREAL! And your plate is packed with lean protein and veggies and you wouldn’t even know it! Hope you enjoy it as much as I did! xx
