Veggie Egg Wrap

Here’s what you need:

1 tortilla (I used a spinach one)

2 eggs

1/4 onion, chopped

1/2 cup shredded kale

1/4 cup sliced mushrooms

Sprinkle of shredded cheese

Sprinkle of Everything But the Bagel (EBTB) seasoning

Here’s how you make it:

In a frying pan on medium heat, add a drizzle of olive oil and add in your chopped onion and cook for 3-4 minutes

Then add in your mushrooms and kale and cook for another 3-4 minutes

Then add in your eggs and scramble so that everything is well mixed! I added some EBTB seasoning and right before you are about to take the eggs off, add in your cheese so it has the chance to melt slightly!

Add egg mixture to your tortilla and you’ve got a quick, easy and delicious breakfast! Feel free to add some avocado or hot sauce
