Creamy Chicken Tortilla Soup

Here’s what you need:

1/2 onion, diced

1/2 cup corn 

2 medium tomatoes, diced

1 bell pepper, diced

2 jalapeños, diced

1/2 cup black beans

1/2 cup kidney beans

1/4 chopped cilantro 

1.2 lbs chicken breasts

40 ounces of chicken broth

1/4 cup Heavy Cream

Toppings: shredded cheese, tortilla chips, green onion, avocado

Here’s how you make it:

Add all veggies in a pan and then add spices and olive oil

Next, add in chicken broth and bring to a boil

Once the soup is boiling, add chicken breast and cook for about 10-12 minutes or until done (cooking the chicken with the veggies and the broth gives it an incredible flavor)

Then take out the chicken breasts and shred it on the side and then put the shredded chicken back in the pot with the veggies and broth!

Now it’s time to add the heavy cream and let simmer for about 5-7 minutes

Top the soup with cheese, tortilla chips, green onion, avocado!! Enjoy!
