Tomato, Mozzarella & Avocado Salad

This salad is SO delicious and SO easy to meal prep, so I always make a lot! It’s also so refreshing and pairs well with any main dish!

1 cup tomatoes soaked in garlic and olive oil, diced

1 cup fresh mozzarella, diced

1 avocado, diced

1-2 tbsp pesto

1 tsp minced garlic

1 tbsp olive oil

Squeeze of lemon

The recipe:

Mix everything together and add salt and pepper to taste. You could also add some red pepper flakes for some extra spice!

Also! I wanted to share 3 helpful tips that prevent avocados from turning brown:

  1. Use lemon! The acidity from the lemon will help “cure” the avocado and prevent it from browning
  2. Keep the pit in! If you keep the pit in the avocado or in the bowl after chopping/mixing the avocado, it won’t turn brown! Just be sure to remember take it out when you’re ready to eat!
  3. Wait until you are ready to serve/eat the salad and add your avocado in last minute to make sure it looks fresh and stays green!!
