Tomato, Mozzarella & Avocado Salad

This salad is SO delicious and SO easy to meal prep—perfect for refreshing side dishes or adding to any main meal!

Ingredients
  

  • 1 cup tomatoes soaked in garlic and olive oil, diced
  • 1 cup fresh mozzarella diced
  • 1 avocado diced
  • 1 –2 tbsp pesto
  • 1 tsp minced garlic
  • 1 tbsp olive oil
  • Squeeze of lemon
  • Salt and pepper to taste
  • Optional: red pepper flakes for extra spice

Instructions
 

  • In a large bowl, combine the diced tomatoes, mozzarella, avocado, pesto, garlic, and olive oil.
  • Squeeze fresh lemon juice over the top and mix everything together.
  • Season with salt and pepper to taste.
  • Add red pepper flakes if you like a little extra kick!

Pro Tips to Keep Avocados from Turning Brown:

  • Use lemon juice! The acidity helps “cure” the avocado and keeps it looking fresh.
  • Keep the pit in the avocado (or in the bowl) until you’re ready to serve—this helps prevent browning.
  • Add the avocado last, right before serving, to ensure it looks fresh and stays green!
