Summer White Bean, Corn & Chicken Chili

Last night I was craving a stew or chili, but wanted to make a lighter summer version of it! So I decided to try a white bean, corn and chicken chili, just completely winging it as I went, and it actually came out SO GOOD!!!

Here is what you will need:

1 onion, chopped

4 large carrots, peeled and diced (or 1 cup of diced carrots)

1 1/2 can of corn (with the corn juice)

1 lb ground chicken

1 tsp chili powder

1/2 tsp cumin

1/2 tsp onion powder

2 cloves of crushed garlic

1 can of white beans

2 cups chicken broth

1/3 cup of half & half

1/2 cup of sour cream

1 cup of chopped parsley

1/2 cup of Monterey cheese

Salt & pepper to taste

Toppings: avocado, cilantro, lime, green onion, tortilla chips, cheese!

 

Here is how you make it:

In a large pot, add onion, carrots and corn and simmer for 2-3 minutes!

Then add in your ground chicken and break it up and brown it! This should take about 5-7 minutes!

Add all of your spices and garlic and mix well! Then add in your can of white beans and chicken broth and cover and let everything simmer for 20 minutes.

Then add all of your creamy goodness…the half and half, sour cream and cheese and let simmer for another 10 minutes!

Then top with any of your favorite toppings! I used avocado, cilantro, lime, green onion, tortilla chips, cheese!
