If you’re prepping your freezer for postpartum, add these chicken patties to the list. They’re packed with protein, incredibly easy to reheat, and will be a lifesaver on those busy days when you are in a pinch!
SERVING SIZE: 22-24 chicken patties
THE RECIPE:
In a large bowl, combine the ground chicken, spinach, onion, eggs, garlic powder, salt, pepper, onion powder, dried parsley, paprika, and sage. Mix until everything is evenly incorporated.
Form the mixture into 22–24 small patties.
Heat a large skillet over medium heat and add a drizzle of olive oil or avocado oil.
Working in batches if needed, add the patties to the skillet and cook for about 4 minutes per side, until golden brown.
Reduce the heat to a simmer, cover if desired, and cook for an additional 2–3 minutes to ensure the patties are fully cooked through.
Remove from the skillet and let cool slightly before serving.
Enjoy right away, or let cool completely and store in the freezer for super quick and easy meals!
