Summer White Bean, Corn & Chicken Chili

Light, creamy, and packed with flavor, this summer-friendly chili is the perfect balance of cozy and refreshing! It’s a lighter take on a classic chili, featuring white beans, corn, and ground chicken for a protein-packed meal. Super easy to make and absolutely delicious!

Ingredients
  

  • 1 onion chopped
  • 4 large carrots peeled and diced (or 1 cup of diced carrots)
  • 1 ½ cans of corn with the corn juice
  • 1 lb ground chicken
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp onion powder
  • 2 cloves of garlic crushed
  • 1 can of white beans
  • 2 cups chicken broth
  • cup half & half
  • ½ cup sour cream
  • 1 cup chopped parsley
  • ½ cup Monterey Jack cheese
  • Salt & pepper to taste
  • Toppings: avocado, cilantro, lime, green onion, tortilla chips, extra cheese!

Instructions
 

  • In a large pot over medium heat, sauté the onion, carrots, and corn for 2-3 minutes.
  • Add the ground chicken, breaking it up as it cooks. Brown for about 5-7 minutes.
  • Stir in the chili powder, cumin, onion powder, garlic, white beans, and chicken broth. Cover and let simmer for 20 minutes.
  • Reduce heat and stir in the half & half, sour cream, and cheese. Let simmer for another 10 minutes, stirring occasionally.
  • Serve warm with your favorite toppings!
