This is one of the easiest pasta salads to make for summer in my opinion, because you really don’t need that many ingredients!! I had street corn pasta at the one and only Flora Farms in Cabo last weekend and I wanted to recreate my own version the moment I got home because it was THAT GOOD! Flora Farms served it has a hot dish but I made mine a cold version! Hope you enjoy!! xx
Here’s what you need:
4-5 cups of cooked & chilled pasta
2 cups of roasted corn
2/3 cup chopped cilantro
1 cup cotija cheese
1 cup red onion, diced
Jalapeño to your spice liking (I did 1/2 a jalapeño, finely diced)
Dressing: 1/4 cup mayo, 1/4 cup greek yogurt or sour cream, juice from 1 lime
Spices: Tajin, salt, garlic powder, chili powder and pepper
Here’s how you make it:
I’m telling you guys, this recipe is SO EASY to make!! Add the cooked & chilled pasta with all of the chopped up veggies and cheese to a large mixing bowl and mix until evenly combined! Then add in your dressing and spices and mix until all of the pasta and veggies are evenly coated! Do a quick taste test and then add more spices/seasoning as necessary!
