Street Corn Pasta Salad

This is one of the easiest pasta salads to make for summer in my opinion, because you really don't need that many ingredients!! I had street corn pasta at the one and only Flora Farms in Cabo last weekend and I wanted to recreate my own version the moment I got home because it was THAT GOOD! Flora Farms served it has a hot dish but I made mine a cold version! Hope you enjoy!! xx

Ingredients
  

  • 4-5 cups cooked & chilled pasta
  • 2 cups roasted corn
  • 2/3 cup chopped cilantro
  • 1 cup cotija cheese
  • 1 cup red onion diced
  • 1/2 jalapeño or to taste, finely diced
  • Spices: Tajín, salt, garlic powder, chili powder, and pepper

For the Dressing

  • 1/4 cup mayo
  • 1/4 cup Greek yogurt or sour cream
  • juice of 1 lime

Instructions
 

  • In a large mixing bowl, toss together the chilled pasta, roasted corn, chopped cilantro, cotija cheese, diced red onion, and jalapeño. Mix it all up until everything is evenly distributed.
  • In a separate bowl, whisk together the mayo, Greek yogurt (or sour cream), and lime juice until smooth. Then, add in your spices—Tajín, salt, garlic powder, chili powder, and pepper—adjusting to your taste.
  • Pour the dressing over the pasta mixture and toss until everything is coated. Taste and adjust the seasoning if needed, adding more spices as desired. Enjoy!!
