This Simple Greek Chicken Bowl is the ultimate quick, high-protein lunch that’s bursting with Mediterranean flavors! With juicy, yogurt-marinated chicken, a fresh Greek salad, and creamy homemade tzatziki, it’s as nutritious as it is delicious. 🥗✨
The recipe:
In a bowl, combine your diced chicken breast, Greek yogurt, lemon juice, salt, and Mediterranean spice blend. Mix well to coat evenly.
Air fry at 385–400°F for 18–20 minutes, shaking halfway through for even cooking.
While your chicken cooks, in a mixing bowl, combine your diced tomatoes, cucumber, red onion, chickpeas, olives, and feta cheese.
Drizzle with olive oil and fresh lemon juice. Season with salt, pepper, and a pinch of fresh basil. Toss to combine.
In a small bowl, stir together Greek yogurt, lemon juice, shredded cucumber, olive oil, salt, and minced garlic. Mix until smooth and creamy.
To serve, divide the salad between two bowls, top each bowl with the cooked chicken, then finally add a generous dollop of tzatziki on the side. Enjoy!!
