If you guys have been following me for a while now, you know how much I love a good veggie sheet pan veggie situation! Love roasting all of my favorite vegetables with some olive oil and seasoning and getting them nice and crispy and flavorful in the oven! AND I also love cauliflower gnocchi so I decided to mix these two ideas together and do a one pan caprese cauliflower gnocchi bake and oh my goodness it came out SO GOOD!!!!
The recipe:
Preheat the oven to 400°F.
Place the frozen cauliflower gnocchi and cherry tomatoes on a sheet pan.
Drizzle with olive oil and minced garlic, tossing gently to coat.
Roast in the oven for 20–25 minutes, shaking or stirring halfway through, until the gnocchi is tender and starting to brown.
Remove the pan from the oven.
Add the spinach, basil leaves, mozzarella balls, an extra drizzle of olive oil, salt, and pepper.
Toss everything together.
Return the pan to the oven for about 5 minutes, or until the spinach is wilted and the mozzarella is melty.
Gently stir everything together and enjoy!
